Jennifer Stack, MS, RDN, CDCES, ‘03 is an associate professor in the School of Culinary Science, Health, and Nutrition at The Culinary Institute of America, where she integrates her expertise in dietetics and culinary practice to advance the connection between food, health, and wellness. A registered dietitian nutritionist, certified diabetes care and education specialist, and CIA graduate (’03), Jennifer is also the author of The Diabetes-Friendly Kitchen: 125 Recipes for Creating Healthy Meals (Houghton Mifflin Harcourt, 2012). She has over two decades of experience developing and implementing culinary nutrition and wellness programs across community, healthcare, and educational settings. At the CIA, she collaborated with colleagues from the Harvard T.H. Chan School of Public Health to implement a teaching kitchen, self-care pilot study for employees, and she led a National Diabetes Prevention Program cohort for the Hyde Park campus. Jennifer is a frequent national speaker, having presented at the American Association of Diabetes Care and Education Specialists and the International Diabetes Center. At the Academy of Nutrition and Dietetics’ Food and Nutrition Conference and Expo, she presented “Diabetes-Friendly Cooking Demos—How to Tantalize, Taste and Teach” during a poster session.
