Located in California's lush Napa Valley, the Culinary Institute of America’s California campus features a wide variety of innovative professional development programs. The main building, once the home of the Christian Brothers winery which miraculously survived the 1904 earthquake, is an impressive stone and concrete Victorian structure built into a mountain which has been completely retrofitted as a modern teaching facility. Just minutes from world-class vineyards and some of America's top restaurants, the Greystone campus is among the finest professional culinary education facilities in the world. Plenary sessions are hosted in the third-floor Ventura Center demonstration theatre. Kitchen sessions utilize a series of cooking islands in the 15,000-square-foot teaching area, which offers spectacular views of the surrounding countryside. Workshops are held in state-of-the-art demonstration theatres and other facilities scattered around the beautifully landscaped grounds.

While visiting the campus, attendees may benefit from the CIA’s 15 acres of vineyards, the Rudd Center for Professional Wine Studies, the Sutter Home Organic Garden, the Cannard Herb Garden, the Wine Spectator Greystone Restaurant, the DeBaun Theater, the Ken and Grace De Baun Café, and the Spice Islands Marketplace (campus store). Collectively, all programs hosted at Greystone and its facilities emphasize the cooking and baking traditions of many cultures, fresh seasonal ingredients, health and nutrition, and sustainable agriculture.
